Orange-Cranberry Oatmeal Cookies

Best. Cookies. Ever.
This was the recipe that my foodie pen pal sent to me. These oatmeal cookies are nutritious and absolutely delicious!!

1 1/4 C oats (quick or old-fashioned)
3/4 C whole wheat flour (white flour can also be used)
3/4 tsp cinnamon
1/2 tsp baking soda
1/2 tsp salt
6 tbsp softened butter
3/4 C firmly packed brown sugar
2 egg whites
1 tsp vanilla extract
1 tsp orange zest
3/4 C dried cranberries
(the last two ingredients listed below were not in the original recipe, I added them in on my own!)
1/2 tbsp pure maple syrup
1/4 C freshly squeezed orange (from the orange I zested!)
Mixing mixing mixing!
Preheat oven to 350 and line a cookie sheet with parchment paper. Mix oats, flour, cinnamon, baking soda, and salt in a bowl. Set aside.

In a separate bowl, beat sugar and butter until fluffy. Beat in egg whites, vanilla, orange zest, orange juice and maple syrup.

Pour the wet ingredients into the dry ingredients and mix together until combined. Fold in cranberries.
I can't even tell you how great the house smelled while these were baking!
Drop by tbsp onto the cookie sheet, about 2 inches apart. Bake 10-12 minutes, until edges are golden. Cool on a wire rack.

  1. Looks yummy!!! do you know how many calories are in each?? Did you hubby give you the caramel apple sucker?? I love them and they are only 60 calories

      I don't know the points value / calories in the cookies, but I'll work it out when I have a few minutes!
