Decadent Dark Chocolate Raspberry Pancakes

Breakfast decadence, anyone?!


Daddy Lego had been talking about making this breakfast treat for weeks now, and today was the day.


Oh. My ... Wow.


Warm, melted Lindt dark chocolate inside a fluffy whole wheat pancake, topped with a perfect raspberry syrup, a dollop of light cool whip and strawberries. Sound good? Here's how it's done!

I know, right?! WOW!
1 1/4 c whole wheat flour
2 tsp baking powder
1 egg
1 c milk
1/2 tsp salt
1 tbsp sugar
Lindt 70% dark chocolate bar
2 tbsp milled flaxseed
a splash of vanilla


Sift all the dry ingredients into a medium bowl. In a separate large bowl, mix your dry ingredients. Soft the dry ingredients into the wet ingredients and stir until dry ingredients are moistened. Break up the chocolate bar and add to your mixture (as much as you'd like! Just keep track of the points!). Mix together and spoon onto a lightly greased stovetop pan on medium heat. Cook until ready.

Yep, it tastes as good as it looks. Maybe even better!
The entire batch before separating was 36 points. We were able to get 4 servings of 1/2 c each. That made each pancake 9 points, then we topped them each with 2 tbsp of pre-made raspberry syrup (though next time we plan to make our own coulis!) which was 1 point.


Now, we'd used the entire Lindt dark chocolate bar in our batch, which definitely increased the points value (and made it super ultra rich!)


Next time we plan to only use half the bar, which means it would make our pancake each worth about six points (before the syrup), but it was a wonderful treat this morning!

Chocolate lovers, rejoice! 
It was rich, it was deliciously bittersweet, it was decadent ... Amazing! If you are a chocolate lover, this pancake is for you!


And now we're heading out for a walk to burn it off!! And to brush our teeth!
